Make the very best of the short Blood Orange season. This underused beauty enhances any menu. Blood oranges mainly come from Mediterranean countries (Southern Italy in particular) and are often considered to be among the finest dessert oranges in the world.
Substitute ordinary oranges with blood oranges – they can be used in soufflés, puddings and sauces and work well in brulée or sorbets. They are particularly delicious in jellies (add a shot or two of orange liqueur ). The fiery colour and unique flavour of blood orange juice also make it a great addition to mayonnaise.
