Salsify is a root vegetable belonging to the dandelion family which has an oystery taste when cooked. Resembling a dirty stick in appearance, the skin underneath is a delicate creamy white flesh which can be roasted, boiled or mashed. Once peeled it benefits from being put in water with a dash of lemon juice to prevent it from going brown.
